The keto diet has been quite popular for awhile now. I actually started it a few years ago and have had great success with it. I lost over 60 pounds and have kept it off. At first I stuck to a very strict keto way of eating, but now I eat a wide variety of foods, including dessert! I love peanut butter and cream cheese which are both keto friendly so I whipped up this rich, delicious Peanut Butter Cream Cheese Pie. It has a peanut no-bake crust that’s filled with the peanut butter and cream cheese mixture. If you don’t tell anyone this is low carb, high fat and sugar free, they will never know!

Keto Peanut Butter Cream Cheese Pie

Ingredients

Nut Crust:

  • 1 1/2 C nuts, finely chopped
  • 1/2 C Swerve granular, or other sweetener
  • 1/4 C butter, melted

Filling:

  • 1 C heavy whipping cream
  • 3/4 C powdered Swerve, or other sweetener
  • 1 Tbsp. vanilla
  • 1 (8 oz.) package cream cheese, softened
  • 1 C creamy peanut butter
  • 2 Tbsp. butter, melted
  • cocoa powder for dusting

Instructions

    For the crust:

    1. Mix finely chopped nuts, Swerve granular and butter together until combined.
    2. Press into the bottom and sides of a 9 inch pie pan.
    3. Place in the freezer until the filling is done.

    For the filling:

    1. Whip the heavy whipping cream, 1/4 C powdered Swerve, and vanilla until stiff peaks form; set aside.
    2. Beat the remaining 1/2 C powdered Swerve, cream cheese, peanut butter and butter until fluffy.
    3. Fold in half of the whipped cream until completely combined.
    4. Spread filling into the pie crust.
    5. Spread remaining whipped cream on top.
    6. Dust with cocoa powder.
    7. Place in the fridge for two hours, or until firm.
    8. Slice, serve and enjoy!

        I do not due to different brands of peanut butter. Each brand will vary the amount of carbs, fat and protein. It’d have to be put into an online calculator using the brand you choose to get the accurate amounts.

      This pie comes together fast and is absolutely delicious. I cut it in small pieces, I got 16 slices and each slice is 20g total carbs. If I take away 2g of fiber and 5g of the sugar alcohol, it comes to 13g of carbs. So you definitely have to work it in to your macros if your are trying to keep it under 20 net carbs a day.

            You have to use an online calculator due to whatever nuts and peanut butter you use.

            It was yummy, but the granular Swerve in the crust stayed gritty. Did I do something wrong? Could you use powdered Swerve in the crust too?

      Made this 3 times now & absolutely love it! I use Peter Pan peanut butter and under cut the sweetners by roughly a tablespoon. Delicious, though I calculated the carbs more than I hoped; around 18 net per slice. Not sure I did it right. Is there a reliable online calculator that you trust?

        I just google an online calculator. Per the recipe, the nuts are around 18 carbs, cream cheese is 8 carbs, and natural peanut butter is about 32 carbs and I’m not sure what Peter Pan is. The sweetener, butter and heavy whipping cream are minimal. Once you add those up (using natural peanut butter) and divide by the 8 slices, it’s only around 8 carbs per slice.

      I have been keto since June 2018 and have tried several dessert recipes. This is the first LEGIT tastes-like-cheating dessert! My carb-loving son even said it was “the bomb.” A small piece is just enough to satisfy!

        It will differ depending on the type of nuts and peanut butter you use so you’ll have to put it into an online calculator.

        I use Smucker’s Natural and it has 4 carbs per 2 tablespoons, however if you are just starting out, you may want to find one with less carbs.

          I used JIF Creamy Peanut butter. Unfortunately I added up all the ingredients AFTER I made the pie and it came out to be MUCH higher Carbs per serving than expected. (Net 27 carbs per slice!!!!).

              What kind of peanuts did you use? I have dry roasted peanuts and they total 36g total carbs and my 1 cup of peanut butter is 56 total carbs. There is no sugar added to either of these. Just peanuts.

              You can use any, however for a lower carb count something like almonds would work best. I’m not sure about the peanut butter being that high…try to find one that is natural with about 3 – 4 carbs per 2 Tablespoons.
